We all know that wine gets better with age and that beer needs time to carbonate and develop its flavor profile. But how much time is too much time?

Last July some divers discovered five bottles of beer from the mid-1800s in a ship wreck near the Finland Aland Islands.

Since this discovery Finnish scientists have been trying to recreate this ale and look into the yeast used in the ale. The VTT Technical Research Center of Finland is interested in the yeast because role of yeast in beer brewing was not fully understood during that time.
