International Bitterness Unit, abbreviated to IBU, is a measurement of a beer's bitterness. Technically speaking, an IBU is measured in parts-per-million (ppm) of isohumulone, the main chemical compound derived from hops that makes beer taste bitter. Isohumulone is created when the alpha acids in hops isomerize, or breakdown, in the boil.
